Stainless steel balls come in various AISI (American Iron and Steel Institute) ratings. 

AISI 440C Stainless Steel Balls
440C stainless steel have excellent toughness and hardness properties.  In addition, they are combined with corrosion resistance.  The hardness makes them great for applications where durability is important and corrosion resistance is needed.  In addition, this grade is ferro-magnetic.  It can be a permanent magnet. 

AISI 420 Stainless Steel Balls
Similar to 440C but with less chrome content.  It offers less corrosion resistance. Resistant to water, steam, oil gasoline, blood, sweat, alcohol, and food environments.

AISI 302 Stainless Steel Balls
302 stainless steel balls have high corrosion resistance.  Use these balls when corrosion resistance is more important than hardness.  This grade is commonly used when the balls are used in food, oxidizing, and organic environments.  They also have non-magnetic properties.  Examples of applications of 302 stainless steel balls include aerosol sprayers, finger pumps, and food processing equipment.

AISI 316 Stainless Steel Balls
316 stainless steel is a ball with superior corrosion resistance, but is considered an unhardened.  It contains molybdenum.  Applications where acids, bleaches, chemicals contact the balls benefit from the high corrosion resistance.
